It takes skill and care at every stage of production to produce a great cup of coffee. It begins with the growers selecting the best stock, growing it according to time honored tradition, and harvesting and drying it with care. Tazzaria selects only the highest quality (specialty grade Arabica) beans.
The roast master has the most critical role — The flavors in coffee are produced by "caramelization" during the roasting process. Our roast master works with each new crop to design the roasting profile that exposes the best flavors available in the bean. Beans are roasted by hand to order, in small batches to ensure the highest quality results.
Once roasted, the most important factor is to brew the coffee before it becomes stale. Roasted coffee beans will loose their exotic flavors within 2 months of being roasted — regardless of the packaging or storage techniques used. After 3 months coffee goes rancid producing the typical bitter flavor that we all have learned to associate with coffee. Even freshly roasted coffee becomes stale within hours of being ground. That's why it’s important to buy whole beans and grind them just before brewing.
In North America most coffee is sold several months after roasting so we have become accustomed to accepting stale, rancid coffee as normal! Tazzaria ships coffee within eight hours of being roasted. When you try it, you'll find it like a whole new class of beverage!
